African Tomato-Avocado-Buttermilk Soup Recipe
Ingredients:
3 lbs of tomatoes (whole); peeled then seeded
1 c of buttermilk
2 Tbsps of tomato paste
2 Tbsps of parsley (fresh); minced
1 Tbsp of olive oil (virgin)
1 pc of avocado (ripe); mashed into puree
Juice from 1 pc of lemon (fresh)
Salt & Pepper (to taste)
Hot sauce (Tabasco, pepper)
Garnish:
Peeled cucumber; seeded then cut to dices
Sour cream (dairy)
Yogurt (plain)
Creme fraiche
Instructions:
Puree the tomatoes and press onto a mesh strainer to get the seeds; discard the seeds. Combine tomato puree, paste, oil, and buttermilk inside a bowl then beat thoroughly.
Combine avocado puree and (1 tablespoon) juice from lemon; toss. Add onto the mixture of tomato along with parsley and the rest of the juice; stir thoroughly. Season salt, pepper & hot sauce. Place inside the refrigerator for an hour or more.
Adjust the seasonings. Serve with the garnishes.
