Alu Matar (Potatoes & Peas In Onion-Tomato) Recipe

Ingredients:

1-1/2 lbs of potatoes (small)
2 pcs of onions (medium)
3 pcs of garlic cloves (medium)
1 pc of ginger (fresh, 1/2-inch piece)
3 Tbsps of vegetable oil
1/8 tsp of crushed asafoetida (optional)
1/2 tsp of cumin seeds
1/4 tsp of cayenne pepper
Salt (to taste)
1/2 tsp of turmeric (ground)
2 pcs of tomatoes (large); coarsely chopped
1/4 c of water
1 c of peas
1/2 tsp of garam masala

Instructions:

Cook potatoes till tender. Remove the skins; set on the side. Place garlic, ginger, and onions inside the processor; process till chopped finely.

Heat oil on a skillet above moderate heat. Add cumin and asafoetida then the mixture of onions; saute till browned. Add cayenne, tomatoes, salt, and turmeric; cook till tomatoes soften.

Add water and peas; reduce heat into low. Cook them, about 5 mins, covered. Add potatoes; cook them, about 5 more mins. Sit in garam masala prior to serving.
