Apple & Green Tomato Chutney Recipe
Ingredients:
12 pcs tart apples (green); washed, cored, blanched and peeled
4 onions (medium)
4 c of cider-vinegar
2 Tbsps of salt
1 & 1/2 Tbsps of powdered curry
24 tomatoes (small, green)
3 c of raisins (seedless)
2 & 1/2 c of firmly packed sugar (brown)
1/2 tsp of crushed, dry chilies
3 Tbsps of pickled mix
Instructions:
Place onions, tomatoes & apples in kettle then add in raisins, sugar, vinegar, powdered curry, red-pepper and salt.
Tie in pickling mix in cloth bag then add into kettle. Then boil for about 25 mins, stir occasionally. You will know its done when apples turn transparent.
Next, remove apples form kettle then boil the remaining liquid rapidly ’til thickened. Discard tied cloth bag w/ pickling then return your fruit into liquid, boil.
You remove kettle from heat then ladle syrup into clean jars then cover at once. Process these syrup-filled jars in water-bath, boiling for about 10 mins.
