Artichoke Tomato Recipe
Ingredients:
A can artichokes
4-5 tomatoes (fresh); chopped into large-sized chunks
1/2 c of chopped basil (fresh)
1 garlic (fresh)
1 onion (medium); chopped
2 Tbsp of whole-wheat flour
Soy milk
Pasta (Spaghetti)
Instructions:
Prepare noodles ’til cooked but firm to touch. Place tomatoes, basil, garlic & onion in stick-free fry pan then saute w/ little juice from artichoke can.
Have your artichoke cut in small slices then add them into saute, adding a bit of flour in order to produce a thickened consistency.
Mix well, adding your soy milk & flour in order to achieve wanted thickness. Toss into pasta then top w/ sauce of artichoke.
