Augusta’s Chilled Tomato Soup With Basil Cream Recipe

Ingredients:

1/2 c of lightly-packed fresh leaves of basil; chopped coarsely
2 c of ripened tomatoes; peeled; seeded and cored
2 c of milk
Salt
Whole leaves of basil
3/4 c of thick cream
1 tsp of honey
2 c of chicken broth
Powdered pepper (black)

Instructions:

Scald thick-cream in saucepan then pour over basil placed in bowl. Stand for 60 mins then you strain cream then deeply chill.

Puree tomatoes, broth, honey and milk using a processor ’til smoothened. Pour puree into bowl then season w/ pepper and salt. Deeply chill.

Before serving, whip your basil-cream then ladle soup that was chilled into cold glass serving cups. Top w/ whipping cream then place fresh leaf of basil on top.
