Baby Spinach Salad With Grilled Onions-Tomato Recipe

Ingredients:

1.5 Tbsps of tomato-paste
1/2 Tbsp of chopped shallots
1 Tbsp pulp of tamarind
1/4 c of vinegar (sherry)
1/4 tsp of kosher-salt
1 & 1/4 c of oil (olive)
A dash of pepper (black)
1 onion (red)
6 c of spinach
1.5 Tbsp of vinegar (balsamic)

Instructions:

Combine pulp of tamarind, vinegar and shallots in blender then mix very well. Gradually add in oil. Adjust to slow beat them stream to have everything thoroughly combined. Add in salt.

Peel one onion then slice thickly to avoid the pieces to separate when you’re cooking them. Have them rubbed w/ a small amount of oil then cook over well-heated broiler ’til soft for about 5-6 mins each side.

Toss 1.5 Tbsp of vinegar into onion slices & have them separated into rings. Wash then dry a handful of spinach then toss w/ enough oil to have every leaf coated.

Arrange onions carefully over salad top then serve on well-chilled serving platters.
