Bacon Avocado & Cheese Omelets With Tomato Salsa Recipe

Ingredients:

2/3 c of seeded tomato; chopped finely
2 Tbsps of onion (red); chopped finely
1 seeded Jalapeno; seeded & minced
1 Tbsp of fresh juice of lime
2 Tbsp of coriander (fresh); minced
4 eggs (large)
1 Tbsp of butter (unsalted)
3 cooked bacon slices; crumbled
2 Tbsps of water
1 California avocado (small); peeled & cubed into half-inch size
1/2 c of Monterey-Jack; grated coarsely

Instructions:

Combine onion, tomato, Jalapeno, juice, coriander, pepper & salt in mixing bowl ’til everything is well-combined. In separate bowl, you whisk water, eggs, pepper & salt together.

In non-stick skillet, heat one-half teaspoon butter in mid-heat ’til foam disappears. Pour one-half of egg-mix, tilt skillet gently to have egg mix spread evenly then have it cooked for about 1 min or ’til it sets.

Sprinkle w/ 1/2 of bacon, 1/2 of avocado & 1/2 of cheese then cook for about 1 min or ’til it sets. fold your omelet carefully over filling then transfer into plate.

Make one more omelet following same procedures w/ rest of butter, egg-mix, cheese, avocado & bacon. Spread w/ prepared salsa on top before serving.
