Baked Eggs In Tomato Shells Recipe

Ingredients:

6 tomatoes (medium)
Salt
6 large eggs
1/2 tsp of crushed leaves of tarragon
1 tsp of onion seasoning
1/3 tsp of ground pepper (black)
2 tsps of grated cheese (Parmesan)
1.5 Tbsp of softened crumbs of bread
1 tsp of flaked parsley
1 tsp of margarine or butter

Instructions:

Keep tomatoes in room temp ’til they ripen fully.

Prepare the oven. Heat it to three hundred fifty degrees Fahrenheit. Thinly cut ends of stem in every tomato. You scoop pulp out then sprinkle insides w/ salt.

Next, invert them on chopping board, allowing them to fully drain for at least 10 mins. Combine tarragon, onion seasoning, pepper and 1/8 tsp of salt, mix thoroughly. Have every tomato shell sprinkle w/ 1/2 tsp of seasoning mix.

Break an egg right into every tomato then arrange them on greased bake pan. Let them bake for 25-30 mins or ’til eggs become firm.

Combine crumbs, parsley and cheese. Sprinkle mixture around the outer portion of every tomato then dot w/ butter. You place them under well-heated broil then cook ’til crumbs turn light-brown, this is for about 1-2 mins.
