Baked Samosa Logs W/Fruit-Sweetened Tomato Chutney Recipe
Ingredients:
8 c of diced cauliflower
1.5 Tbsp of unsweetened dessicated coconut
1.5 c of fresh baby-peas
1 tsp of powdered curry
1/2 tsp of paprika
1/8 tsp of pepper (cayenne)
2 Tbsps of fresh cilantro
1/2 tsp of salt
1.5 tsp juice of lemon
12 chapatis (whole-wheat)
2 tsps of virgin oil (olive)
1/2 Tbsps of minced Jalapeno
2 Tbsps grated ginger
1 tsp of crushed cumin seed
1/2 Tbsp of crushed seeds of coriander
5.5 c of pureed tomatoes
1/2 c of white-grape juice
2 c of diced tomatoes w/ juice
Salt
Pepper
Instructions:
Steam the cauliflower inside pan for about 10 mins. Add peas & steam it for three minutes more. Transfer them into bowl then add powdered curry, coconut, paprika, cayenne, juice, salt & cilantro.
Toss well to have everything mixed. Cool mixture slightly then divide mixture evenly into twelve portions (1/2 c each).
Place a chapati in working surface then lightly brush w/ water. Manually shape one portion veggie mix into small log. You place them 1 & 1/2-inch away bottom-edge of chapati.
You roll it halfway, then fold the sides, and then continue log rolling. Do the same procedure for rest of chapatis. Place them on bake sheet w/ seam-side-down.
Brush the samosa w/ oil. Bake at 375 deg Fahrenheit for 15-20 mins ’til golden and crisp. Cut every samosa into half. Serve w/ fruit-sweetened tomato-chutney.
For the Chutney: You heat 2 tsps of oil in saucepan then add in cumin, ginger, coriander seed & pepper. Cook for 1-2 mins or ’til aromatic.
Add rest of ingredients then boil mixture. Minimize heat then simmer without cover for 35-40 mins.
