Baked Tomatoes Stuffed With Leeks Recipe
Ingredients:
6 pcs tomatoes (medium)
4 Tbsps of oil (olive) plus 3 tsps
Tabasco hot sauce
2 leeks (small)
Salt and Pepper
6 Tbsps of dried crumbs of bread
3 Tbsps of parsley; chopped
Instructions:
Prepare oven. Heat it to four hundred degrees Fahrenheit.
Grease shallow bake dish. Next, wash your tomatoes then cut stem off. Scoop seeds & the pulp then discard. Arrange tomatoes upside-down on paper-towels to completely drain then transfer to bake dish.
Have the leeks thoroughly washed then dry. Remove the tips. Arrange the pieces of leek flatly on chopping board then slice finely crosswise.
Heat 4 Tbsps of butter in pan then cook leeks ’til soft. Add pepper, Tabasco and salt. Take 1/6 portion of leeks then scoop into your tomato, top w/ 1 Tbsp of crumbs. Drizzle w/ 1/2 tsp oil over every tomato.
Adjust oven temp to three hundred fifty degrees Fahrenheit then bake tomatoes for about 12 mins. Sprinkle w/ parsley before serving.
