Baloo’s Pasilla & Tomato Paste Recipe
Ingredients:
6 dry seeded peppers (Pasilla)
4 liters of water
Lime juices
5 centiliters of cognac
250 grams of dry tomatoes
3 cloves garlic (large)
5 centiliters of Japanese soysauce
1 Tbsp of honey
Instructions:
Have tomatoes & chilies toasted slightly in well-heated fry pan. Put tomatoes, water and chilies in saucepan then boil ’til soft (approx 10 mins).
Add in garlic then simmer for 3 mins more. Drain & reserve liquid. Place tomatoes & chilies in processor. Blend in juice, soysauce, cognac and honey. Pulse on high-speed to create a smoothened paste-like consistency.
Pour in a bit of liquid reserved as necessary. Boil your paste slowly for few mins then transfer into jars.
