Barley With Sun-Dried Tomatoes & Scallions Recipe
Ingredients:
3 Tbsps of butter (unsalted)
1 bunch of medium scallions (both green and white portions); sliced thinly
1.5 tsp of salt
4.5 c of boiled water
1.5 c of barley
10 pcs oil-packed dried halved tomatoes; sliced into 1/4-inch thick
1/2 tsp of freshly powdered pepper
Instructions:
Have butter melted in saucepan. Cook barley over high-heat for about 2 mins, frequently stirring. Add in scallions then cook them for another minute.
Add tomatoes, pepper and salt. Pour boiled water in then continue boiling. Adjust into low-heat then cook w/ cover, occasionally stirring ’til barley becomes chewy (approx 35-40 mins). Best if served w/ roast-veal.
