Beans – Bows – Meatball – Tomato Soup Recipe
Ingredients:
1 beaten egg
1 Tbsp of onion; chopped finely then sauteed
2 Tbsps of grated cheese (Parmesan)
1/2 c of softened crumbs of bread
1 Tbsp of chopped parsley
Pepper
1/4 tsp of garlic seasoning
1/2 pound of lean beef (ground)
Soup1/2 c of beef stock
15 ounces of tomatoes w/ basil (canned)
2 c of water
8 ounces can of beans (garbanzos); rinsed & drained
1 tsp of Italian spice seasoning
1/2 c of bowtie; uncooked
1 c of mushrooms; sliced
2 c of torn leaves of spinach
Instructions:
Meatballs: Combine onions, eggs, crumbs, cheese, parsley, powdered garlic, pepper and ground beef. Blend well to have everything combined. Form into balls. Cook about 24 to 36 meatballs for 8 mins or ’til browned.
Stir broth, tomatoes, seasonings and water in large-sized stockpan. Allow to boil then add bow ties. Minimize heat and continue cooking for 8 more mins.
Add mushrooms, meatballs and spinach. SImmer for 20 mins or ’til well heated through.
