Beefy Zucchini-Tomato Casserole Recipe
Ingredients:
3 Tbsps of oil (olive)
3 cans of tomato-sauce (8 ounces)
1 & 1/2 pound of beef (ground)
1 Tbsp of sugar
3 Tbsps of oil
1/4 tsp of powdered pepper
1/8 tsp of powdered oregano
1/4 tsp leaves of thyme
Grated cheese (Parmesan)
1 c of dry wine (red)
1 onion (medium); sliced thinly
1 tsp of salt
1/8 tsp of dry sweet leaves of basil
1/4 tsp of marjoram
2 pounds of zucchini
Instructions:
Have oil heated in Dutch-oven. Cook & stir ground beef & onions ’til meat is browned lightly. Drain excess fat off.
Add rest of the ingredients excluding cheese and zucchini. Bring to a boil then minimize heat. Simmer w/ cover, stir occasionally for 60 mins.
Preheat oven (350 degrees F). Trim zucchini ends then cut them into half lengthwise. Place them on a greased baked dish (15″x9″x2″). Pour over tomato-sauce. Bake without cover for 45 mins. Top w/ cheese prior to serving.
