Bruschetta With Chopped Tomato Salad Daley Recipe
Ingredients:
2 c of chopped tomatoes
1 c of chopped bellpepper (yellow)
1 c of chopped bellpepper (red)
1 c of chopped onion
3 Tbsp of chopped basil
2 tsps of capers
2 tsps of fresh juice from lemon
3 Tbsps of chopped basil
1 Tbsp of vinegar (balsamic)
Pepper (black)
1 garlic clove; peeled & minced
8 pizza slices dough-baguette
1 tsp of dry oregano
3 garlic cloves; peeled & halved
Instructions:
Combine tomato, yellow and red bell pepper, onion, caper, basil, balsamic vinegar, juice, black pepper, garlicand oregano in large-sized bowl. Toss all ingredients thoroughly then cover. Place in your refrigerator for an hour.
Have your broiler preheated. Arrange bread above rack of broiler then broil for 2 mins on every side ’til browned. You remove pieces of bread then rub w/ cut-side of garlic. Discard garlic.
Scoop a salad mound on serving platters w/ two bruschetta slices beside.
