Cajun Stuffed Tomatoes Recipe
Ingredients:
4 pcs of tomatoes (large)
1 lb of sausage (andouille); coarsely chopped
1/2 c of chopped celery
2 tsps of minced garlic
1/2 c of chopped green bell pepper
2 tsps of crushed thyme
2 pcs of eggs; lightly whisked
Instructions:
Cut out the stems from each piece of tomato then remove and save pulp for later use. Drain tomatoes by turning them top side down.
Saute sausage in heated skillet ’til brown in color for 3-4 minutes. Mix in thyme, garlic, celery and green bell pepper. Let it cook ’til tender for 2-3 minutes. Turn off heat then add in your eggs.
Scoop a spoonful of sausage mixture to the tomatoes then set them on a baking sheet with half inch of water. Bake ’til tomatoes become tender for 20 to 25 minutes. Good for 4 persons.
