Cajun Tostada With Tomato Cumin Dressing Recipe
Ingredients:
4 pcs of skinless & boneless chicken breast
1/2 c of blackening powder (Cajun)
3 Tbsps of vegetable oil
2 c of shredded lettuce (iceberg)
4 pcs of tortillas (flour)
2/3 c of spiced beans (refried); heated
6 ozs of crumbled cheese (Feta)
1 pc of avocado; peels off, seeded & sliced
Tomato cumin
Instructions:
Coat evenly chicken with Cajun. Heat oil into a heavy skillet ’til hot. Fry chicken 2-3 minutes per side. Cut chicken to strips diagonally after frying.
Set aside. Heat oil into another skillet then fry tortillas ’til crisp. Let tostados drain using a paper towel then set aside. Combine cheese and lettuce into a bowl and add in tomato-cumin dressing. Mix well.
Spoon the beans over each chips. Top with chicken then with lettuce. May garnish with avocado. Good for 4 persons.
