Calzone With Sun-Dried Tomatoes Recipe
Ingredients:
Deep dish pizza dough
1/4 lb of prosciutto; sliced or salami sliced to strips
1 Tbsp of sun dried tomato oil
1 pc of minced onion (medium)
1 c of cheese (Ricotta, 8 ozs)
1/4 c of sun-dried tomatoes; chopped
2 Tbsps of parsley (fresh); chopped
2 c of cheese (whole milk m mozzarella); shredded
1 cl of minced garlic
Cornmeal
Olive oil
Instructions:
Prepare the dough then set it aside to rise. Heat oil on medium-heat and saute onion ’til brown. Add in the garlic and turn off heat.
Combine cheese, sun-dried tomatoes with parsley into a bowl. Add in sauteed onions. Divide the dough equally into half.
Pat down dough over a lightly-floured work table to form a 12 inch round. Spread ricotta mixture into half of dough excluding a half inch around the edges.
Coat the rounds with prosciutto and mozzarella then fold dough over the filling. Moisten and pinch sealing the edges. Sprinkle cornmeal over a large-sized cookie sheet.
Transfer calzone on cookie sheet and bake inside a preheated oven with a temperature of 450 degrees-F. Allow dough to rise ’til puffy for 12-15 minutes. Brush each calzone with oil. Best served hot. Good for 4 persons.
