Capellini With Burst Cherry Tomato Sauce Recipe
Ingredients:
1 pound of thin spaghetti/capellini
1/4 c of olive oil
1 tsp of oregano
3 pts of washed tomatoes (cherry)
2 cl of garlic
A pinch of pepper flakes
1/2 c of canned or Greek olive; seeded and sliced
1/2 c of cheese (Parmesan); shredded
Instructions:
Heat oil into large-sized skillet on medium to high-heat ’til hot. Saute tomatoes then stir frequently. Let it cook for 10 to 12 minutes with cover, stirring pan once.
Continue cooking ’til tomatoes are bursting out. Gently press with spoon, mashing the tomatoes. Add in salt, olives, oregano. flakes and garlic.
Reduce heat then let it simmer about 7 to 10 minutes. Drain after cooking. Top pasta with sauce then sprinkle cheese. Good for 4 persons.
