Chicken~ Corn & Tomato Chowder Recipe
Ingredients:
3 lbs of chicken; chopped
16 ozs of canned corn with juice
1 pc of chopped onion (medium)
1 tsp of seasoning
16 ozs of canned tomatoes; drained & chopped up
1 tsp of lemon juice
Salt & pepper
Instructions:
Into a big saucepan, chicken should be simmered in about 4 c water with the onions and seasonings for about 45 mins.
Take out chicken then allow to cool and set broth aside. Skim the fat off your broth. Remove the meat from your chicken then discard the bones and skin. Cut chicken meats into bite size pcs.
Get a big non aluminum saucepot then mix broth and chicken meat, lemon juices, tomatoes & corn then simmer mixture for about 30 mins. Season soup with some pepper and salt. Makes 8 portions.
