Orange Scented Sundried Tomato Relish Recipe
Ingredients:
2 pinches of saffron (powdered)
1/2 c of wine (Sauvigno Blanc)
1/4 c of vinegar (red wine)
1 Tbsp of oil (olive)
2 Tbsps of onion (red); diced finely
2 Tbsps of peppers (bell, yellow); diced
14 c of sugar
1/2 c of tomato (juice)
1.5 c of tomatoes; peeled & seeded, chopped up
1/2 c of tomato halves (sun dried)
Zest of an orange (blanched)
4 pcs oranges; peeled & segmented with rinds removed
Pepper & salt (to taste)
Pepper (cayenne, to taste)
Instructions:
Reconstitute tomatoes (dried); drain then slice thinly. Simmer the saffron using wine 5 minutes then strain through pan with vinegar (red wine) as well as sugar. Then cook ’til syrup-like in consistency.
Saute peppers and onion using oil, retaining texture as well as color. Add pepper, cayenne, salt, oranges, juice, zest and tomatoes. Let stand at least 2 hours to nurture taste.
