Cauliflower Tomato & Green Pea Curry Recipe
Ingredients:
800 gms of cauliflower; flowerets separated
1.5 c of frozen or fresh green peas
3/4 tsp of tumeric
1 pc of onion (medium); sliced thinly
1 tsp of garlic; crushed
1 tsp of ginger; grated
1 Tbsp of coriander; ground
1 Tbsp of vindaloo paste
3/4 c of yogurt
2 tsps of sugar
4 Tbsps of ghee
2 pcs of opened cardamoms
2 c of tomatoes; sliced to wedges
Instructions:
Blanch peas and cauliflower ’til tender. Let vegetables drain. Saute garlic, ginger and onion with ghee ’til tender. Mix in yogurt, cardamoms, sugar, vindaloo, coriander and tumeric.
Let it cook about 3 to 4 minutes. Mix in tomatoes then cook another 3 to 4 minutes. Mix in peas and cauliflower. Let it simmer about 3 to 4 minutes then serve warm on rice. Good for 4 persons.
