Green Tomato Relish Recipe
Ingredients:
6 pcs of red peppers
2 lbs of green tomatoes
1 pc of cabbage head (small)
3 pcs of green bell peppers
2 c of cider vinegar
2 pounds of onions
1 c of water
3.5 c of sugar
1 Tbsp of mustard seeds
1/4 c of pickling salt
1 Tbsp of turmeric; ground
2 tsps of celery seeds
Instructions:
Blend tomatoes, onions, red and green bell peppers in food blender. Line a strainer with cheesecloth and pour mixture to drain for an hour.
Combine tomato mixture, celery seeds, mustard seeds, vinegar, salt and sugar. Let it boil then simmer on low-heat for 5-7 minutes, frequently stirring.
Fill sterile jars with relish, making sure there are no air pockets. Transfer jars to a rack and place to the bottom of a large pot. Pour with water then boil covered for half an hour.
