Green Tomato Relish II Recipe
Ingredients:
6 lbs of green tomatoes
4 Tbsps of pickling salt
3 pcs of onions (medium)
3/4 c of red bell pepper
5 pcs of thinly sliced lemon
1.5 c of brown sugar
2 tsps of allspice
2 tsps of peppercorns (white)
2 tsps of cloves (whole)
2 tsps of celery seed
2 tsps of mustard seed
2 tsps of mustard (dry)
1.5 c of vinegar
Instructions:
Rinse then core tomatoes. Remove peel of onions. Cut onions and tomatoes thinly then add salt. Let it sit overnight.
Drain the tomato mixture thoroughly the next day. Transfer into a large-sized kettle then add in spices, vinegar, mustard inside a tied bag, sugar, pepper and lemon.
Let it boil for half an hour ’til thickened slightly. Remove the tied bag then fill sterilized jars with relish. Seal the jars immediately.
