Pasta Cioppino W/Sun-Dried Tomatoes Recipe

Ingredients:

1/2 c of olive oil
1/2 c of tomatoes (sun-dried); chopped coarsely
2 pcs of garlic cloves; sliced
2 pcs of mussels
1 Tbsp of butter
1/4 c of parsley (fresh); chopped
2 pcs of clams
2 Tbsps of basil (fresh); minced
1 c of onions (green); chopped
2 pcs of shrimp; peeled and deveined
2 pcs of scallops
1/8 tsp of saffron
2 c of marinara sauce (fresh)
1 c of sweet wine (Marsala)

Instructions:

Heat oil on a saucepan then add garlic and saute. Add mussels, clams, basil, (sun-dried and fresh) tomatoes, onions, butter, saffron, and parsley.

Let it simmer till the (fresh) tomatoes have cooked well. Add scallops and shrimps once the mussels and clams have started opening.

Deglaze it with the wine and marinara sauce. Let it simmer till the mussels and clams open. If there are any shells that didn’t open, take them out. Serve.
