Braised Chicken & Sausages with Tomatoes Recipe
Ingredients:
1 & 3/4 pound of sweet sausage (Italian)
3 red bellpeppers (medium); sliced into thin strips
1 c of wine (red)
3 onions (medium); sliced thinly
3 centiliters of minced garlic
4 pounds of skinless & boneless chicken-breast; quartered
3 Tbsp of oil (olive)
1/4 c of chopped parsley
A can of tomatoes (28 ounces); crushed
2 Tbsps of basil; chopped finely
1/2 tsp of pepper (black)
1/2 tsp of salt
1 c of sliced ripen olives
Instructions:
In eight-quarts Dutch-oven placed over mid-heat, cook sausages ’til brown. Drain then cool the sausages completely. Reserve drippings. Cut in one-inch diagonal slices then transfer into bowl.
Drain the drippings setting aside one tablespoon. Add the onions to the drippings then cook them over mid-heat for 5 mins. Raise fire slightly.
You add red-pepper then cook for another 5 mins. Add in garlic then cook for another minute. Transfer into bowl w/ sausage.
Warm the oil using the same small pan placed over mid-heat. Add the chicken gradually to avoid over-crowding of pan. Cook every batch for 5 mins or ’til browned evenly. Add into a sausage of bowl.
Add the wine into pan, stir and scrape brown-bits. Add parsley, tomatoes, oregano, basil, pepper and salt. Add chicken-sausage mix.
Minimize heat then simmer w/ cover for twenty-five minutes ’til meat is cooked. Blend in olives during remaining minutes of cooking.
