Onion & Tomato Tart With Anchovies Recipe
Ingredients:
Pizza dough
4 Tbsps oil (olive)
2 Tbsps garlic; slivered
4 large onions; sliced
1 tsps leaves of rosemary; chopped coarsely
2 tsps fresh oregano
2 c of tomatoes (ripe); diced & seeded
1 Tbsp parsley; chopped coarsely
2 c of canned tomatoes; diced & drained
Salt & pepper (freshly ground)
2 ozs fillets of anchovies (in can); rinsed & patted dry
3/4 c olives (Nicoise or Kalamata); pitted
Instructions:
Preheat oven (500 degrees F). Let dough pizza rise inside warm area meanwhile making topping. Then heat two tablespoons oil (olive) then saute parsley, rosemary, oregano, garlic and onions ’til light brown.
Drop the tomatoes then take away from flame. Season using pepper as well as salt then cool. Flatten dough forming a rectangle of 1/4″ thick on baking sheet, cornmeal-sprinkled.
Spread onion-tomato mixture equally on dough within 1/2″ from edge. Place anchovies above dough as well as olive. Drizzle remaining two Tbsps oil (olive). Bake 8 – 10 minutes ’til crust becomes crisp and golden. Serve.
