Avocado & Mozarella Cheese Stuffed Tomatoes Recipe
Ingredients:
2 large avocados; sliced into 1/2-inch cubes
2 Tbsps of vinegar (balsamic)
5 garlic cloves (large); chopped
4 ripe tomatoes (large)
2 Tbsp of white-wine
1 Tbsp of fresh basil; chopped
Garlic chives
1 tsp of mustard (dijon)
4 Tbsps of extra-virgin oil (olive)
1 lettuce leaf (red)
6 ounces of Mozarella; sliced into 1/2-inch size
Instructions:
Halve tomatoes then scoop the insides out. Place every tomato half above plate lined w/ lettuce.
Combine garlic, vinegar, basil, wine and oil using your blender. Blend then add seasonings accordingly. Toss into mozarella and avocado cubes ’til everything is coated completely.
Stuff the tomatoes w/ mixture then garnish w/ garlic-chives.
