Basil-Tomato Vinaigrette Topping For Potatoes Recipe
Ingredients:
1/4 tsp of salt
3 Tbsps of red-wine vinegar
1/3 c of extra-virgin oil (olive)
1 Tbsp of chopped basil
1/4 c of onion (red); diced finely
1/4 tsp of pepper (black)
A medium-sized tomato (ripe); slice into 1/4 inch cuts
Instructions:
Combine salt, pepper, onion and vinegar in mixing bowl. Stand mixture for about 15 mins. Add in oil. Then stir basil and tomato in. Refrigerate mixture for a minimum of 1 hr.
Add more pepper and salt if necessary. Mix everything thoroughly before serving. Best when served as salad topping or fresh-cut marinade.
