Pasta & Navy Beans In Tomato Sauce Recipe
Ingredients:
1/2 c of pasta
2 Tbsps of olive oil
2 c of broccoli (florets)
3 cloves of garlic; shredded
3 pcs of plum tomatoes; chopped
3 pcs of parsley (fresh sprigs); chopped up
2 c of tomato sauce (low sodium)
1/4 c of water
2 tsps of oregano (dried)
2 tsps of basil (dried)
2 c of cooked beans (navy)
1/4 c pf olives (black); slivered
Salt & Pepper (to taste)
Parsley (for garnish); chopped
Instructions:
Cook the pasta as stated in the package instructions; drain. Heat the oil on a pot then add the garlic; saute till garlic has turned slightly browned.
Add the tomatoes and stir. Add water, tomato sauce, parsley, basil, and oregano. Cook above moderate heat for 8 mins, uncovered, while mashing the tomatoes.
Once the sauce has thickened, add the broccoli and cover. Let it simmer for five mins till broccoli has softened yet still crisp.
Add the olives then the beans; mix thoroughly and cover. Let it simmer till heated thoroughly. Season salt & pepper; stir then sprinkle parsley. Serve.
