Astakos Plaki – Lobster In Tomato Sauce Recipe
Ingredients:
2 lobsters (live)
25 strands of saffron soaked 1/4 c of heated water
1 leek (medium); washed & chopped finely
1/4 pound of onion; chopped finely
8 Tbsps of fruity oil (olive)
1 pound of skinned tomatoes; seeded & chopped finely
3 cloves garlic; minced
4 sun dried tomatoes; pounded to form paste
1/4 c of orange-flavored juice
1/2 c of wine (white)
Bay leaf
Salt
Pepper
1 Tbsp of mint; chopped finely
1/2 c of fennel; chopped finely
1/2 c of parsley (flat-leaf); minced
Rice (Saffron)
Instructions:
Plunge lobsters into pan filled w/ boiled water. Do it quickly for a minute and then soak into cooled water.
Break claws off then crack open using hammer. You cut tail tip off then you sever tail which connect to head using a knife. Then cut lobster tails into small rings by slicing lobster’s shell in between ribs.
Give lobster a strong blow to open head, splitting lengthwise. Remove then discard sac in stomach. Put in strainer placed over bowl then sprinkle w/ pepper & salt then set aside. While doing this, have your saffron soaked.
In large thick pan, fry onion then the leek in three tablespoons of oil ’til translucent. You may add garlic, tomatoes w/ liquid, tomato-paste, wine, bayleaf and juice. Season then simmer with cover for about 15 mins.
Blend in mint, fennel, saffron w/ liquid, parsley, lobster’s tail & claw pieces then simmer with cover for ten minutes.
Meanwhile, push coral & lobster’s liver through sieve then you beat lightly the puree w/ remaining oil. As soon as your lobsters have simmered for at least 10 mins, ladle about a cup of sauce then beat into puree of coral.
Pour mixture into pot then stir. Simmer mixture for additional 10 mins. Serve w/ saffron-rice.
