Native American Lima Bean & Tomato Soup Recipe
Ingredients:
1 lb of beans (lima); dried
1/4 lb of pork (salted)
1 tbsp of salt
1 sprig of parsley
3 quarts of water
3 pcs of tamotoes; cored
2 pcs of onions; thinly sliced
1 pc of chili (pequin); crushed
Instructions:
Immerse beans into 1.5 quarts of water about 3.5 hours; rinse and drain.
Put beans into a large kettle filled 1.5 quarts of water, then add in the rest of the ingredients then simmer an hour. Remove cover then simmer another hour. Then serve while hot. Serves 6.
