Mussel & Tomato Soup Recipe
Ingredients:
1 lb of mussels (bearded); cleaned
1 c of plum (canned); drained & chopped
1/3 c of olive oil (virgin)
2 tsps of garlic; minced
1 pc of tomato
A dash of pepper (red); crushed
Instructions:
In pan, fry garlic into (olive) oil in single minute. Then add in mussels, pepper, tomatoes and plum; cover. Simmer ’til mussels crack open. Serves 4.
