Cate’s Guacamole-Tomato Cup Salad Recipe
Ingredients:
2 pcs of avocados (ripe)
2 tsps of lemon juices
1 pc of onion (small); minced
A can of chopped green chilies
1 bottle of wax pepper; minced
1/2 tsp of wax pepper juice
Bed of tomatoes/lettuce
4 pcs of crumbled slices of bacon
2 tsps of salt
Instructions:
Drain bacon using a paper towels before crumbling.
Remove stem ends of tomatoes. Core out tomatoes then scoop the pulp and finely chop.
Add salt inside tomatoes and drain tomatoes top side down using a paper towels. Transfer to refrigerator to cool. Add salt, juice of lemon, chilies and onion. Stir well then chill.
Just before serving, mash avocado and add to tomatoes. Set tomato salad over lettuce bed. Fill tomato shells with mashed avocado then sprinkle bacon on top. Serve right away. Good for 6 persons.
