Charred Tomato Jalapeno Vinaigrette Recipe
Ingredients:
2 pcs of tomatoes (whole)
2 pcs of jalapeno
2 Tbsps of olive oil
1 Tbsp of minced garlic
1 Tbsp o mustard (Dijon)
1 Tbsp of vinegar (red wine)
1 Tbsp of vinegar (rice wine)
1 cup of olive oil
2 Tbsp of chiffonnade
2 Tbsps of diced onion (red)
1 cup of olive oil
1 Tbsp of sesame oil
1 Tbsp of powdered chili (Ancho)
Salt & pepper
Instructions:
Brush jalapeno and also tomatoes w/ oil then cook ’til skin starts to char. Set aside to cool then chop tomatoes coarsely and thinly slice jalapeno.
Combine onion, garlic, mustard, red & rice wine vinegar, sesame oil, chiffonnade, powdered Ancho, pepper and salt.
Add in tomatoes then jalapeno then mix well. Set it aside to cool slightly before using. Makes 2 portions.
