Cheese & Tomato Souffles Recipe

Ingredients:

2 Tbsps of butter (unsalted)
1.5 c of milk
1 c of grated cheese (Swiss)
3 Tbsps of tomato paste
Cayenne (to taste)
1/4 c of flour
3 Tbsps of grated cheese (Parmesan)
1 Tbsp of dry sherry (medium)
3 pcs of eggs (large); separated

Instructions:

Melt butter on low-heat in saucepan. Add flour, stirring while cooking about 3-5 minutes. Take it off the heat then whisk milk ’til smooth and thick.

Allow to simmer for about 3-5 minutes then mix in tomato paste, cheeses, salt and cayenne. Beat ’til cheese melts. Turn off heat then beat in yolks whisking well for every addition. Pour mixture in mixing bowl then set aside to cool.

Beat whites then add a dash salt ’til peaks have formed. Mix in sherry then beat well. Add this into milk mixture slowly and thoroughly.

Pour over ramekins then bake in center of preheated oven with temperature of 400 degrees-F for 25 minutes ’til cooked. Best served hot. Good for 6 persons.
