Chicken Braised With Fennel Tomatoes Recipe
Ingredients:
1 pound of boneless, skinless chicken breast
Salt and pepper
8 ozs of fennel (bulb)
3 Tbsps of olive oil
16 ozs of canned stewed tomatoes (Italian-style)
1 tsp of fennel (seed)
Instructions:
Cut chicken to 2.5 inch pieces then coat with pepper and salt. Chop the fennel bulb crosswise to fine slices
Saute chicken in heated oil on medium to high-heat ’til brown for 3 minutes per side. Transfer chicken on plate. Saute fennel bulb into pan ’til brown for 3 minutes. Mix in one-fourth cup of water, seeds and tomatoes.
Let it boil and lower heat into low. Add half cooked chicken in pan and cover ’til chicken turns white and moist for about 5 minutes. Good for 4 persons.
