Chicken Breasts With Dried Tomatoes In Port C Recipe
Ingredients:
1/2 c of minced tomatoes (dried)
3 Tbsps of butter
1.5 c of whipped cream
3 pcs of boneless, skinless chicken breasts; halved
1 c of port wine
7 ozs of dried fettuccine or
10 ozs of fresh fettuccine
Instructions:
Saute chicken with butter on medium to high-heat for 3-4 minutes per side. Remove the chicken from pan.
Pour wine, cream and tomatoes into pan then allow to boil without cover on high-heat ’til bubbly for 15-20 minutes, occasionally stirring.
Cook pasta in boiling-hot water without cover ’til firm yet tender. Let it drain on serving dish.
Add in chicken into the cream mixture then season with pepper and salt. Pour sauce on top of pasta then serve. Good for 6 persons.
