Chicken Corn & Tomato Chowder Recipe
Ingredients:
3 lbs of chicken; chopped
16 ozs of canned corn; with juice
1 pc of chopped onion (medium)
1 tsp of seasoning
16 ozs of tomatoes; drained & coarsely chopped
4 c of water
1 tsp of lemon juice
Salt & pepper
Instructions:
Boil chicken, seasonings and onions in water for about 45-50 minutes. Transfer chicken to cool. Save liquid. Remove fat off broth then trim the bones and skin off the meat. Cut chicken to small pieces.
Combine broth, chicken, juice of lemon, corn & tomatoes. Allow to simmer about half an hour then season using pepper and salt. Good for eight persons.
