Chicken Fricassee With Tomato Dumplings Recipe
Ingredients:
2.5 broiler chicken; chopped
2 pcs of celery
3 c of water
1/2 tsp of salt
2 pcs of carrots (medium); sliced thinly
1 pc of chopped onion (medium)
2 Tbsps of flour
1/4 tsp of allspice; ground
1/2 c of water
1/4 tsp of pepper
2 tsps of baking powder
1.5 c of flour
3/4 tsp of mustard (dry)
3/4 c of tomato juice
1/2 tsp of salt
Instructions:
Combine chicken, celery, carrots, onion, salt, pepper and allspice into a large-sized kettle. Let it boil then lower heat. Simmer with cover for a couple of hours ’til chicken is cooked through.
Combine 2 tablespoons of flour and half cup of cold water. Blend completely. Add this to the kettle then stir.
Combine 1.5 cup of flour, baking powder, mustard and salt into a large-sized bowl. Blend well. Mix in juice of tomatoes gradually to form dough then drop the dumplings on kettle with a round teaspoon.
Cook with cover for 15 to 20 minutes ’til cooked. Don’t remove cover as dumplings cook. Good for 6 persons.
