Chicken In Wine & Tomato Sauce (Poulet Mare) Recipe
Ingredients:
3 lbs of chicken; chopped coarsely
2 Tbsps of butter
1/2 tsp of garlic; minced
2 Tbsps of olive oil
1/2 c of broth (chicken)
1.5 c of mushrooms, sliced thinly
1/2 c of onions; chopped finely
1 pc of bay leaf
Salt & pepper
1/4 c of tomato paste
2 pcs of thyme sprigs (fresh)
1/2 c of dry wine (white)
2 c of tomatoes; cored & diced
2 pcs of parsley sprigs (fresh)
Instructions:
Season chicken using pepper and salt. Into a skillet, heat oil and butter then saute chicken ’til brown about 5-6 minutes. Turn chicken then cook for 2-3 minutes. Discard drippings then cover chicken in mushrooms.
Next, add in thyme, bay-leaf, garlic and onion. Cook for 5-6 minutes. Stir in wine then add broth, tomato paste, parsley and tomatoes.
Let it boil then cover. Set to simmer about 10-15 minutes. Remove herbs then serve. Good for 4 persons.
