Chicken With Feta & Tomatoes Recipe
Ingredients:
1 cup of rice (long grain)
1-1/4 c of skinless, boneless chicken breasts; halved
1/2 cup of paprika
1/4 tsp of pepper
1 pc of chopped onion (medium)
2 cl of beans (Garbanzo); minced
1.5 c of milk
1 tsp of oregano
14 ozs of canned tomato; drained
1/4 cup of butter
6 ozs of cheese (Feta)
1/2 cup of sliced black olives
Instructions:
Cook the rice with couple cups of water about 20-25 minutes. Chop the chicken to small cubes. Mix paprika, oregano and flour. Sprinkle flour-spice mixture over chicken, save one-half of mixture.
Melt one-half of butter in skillet then cook the chicken ’til brown lightly. Remove from pan then set aside. Melt the other one-half of butter into pan then saute garlic and onions for 3-4 minutes.
Add a couple tablespoons of flour then cook for 2-3 minutes. Chop tomatoes to chunks. Dice then drain the cheese. Mix the tomatoes to the chicken. Let it cook for a minute then season as needed. Serve on rice sprinkled with some olives.
