Chicken With Linguine-Leeks & Tomatoes Recipe
Ingredients:
4 pcs of skinless, boneless chicken breasts; halved
1/4 tsp of powdered garlic
1/4 tsp of paprika
1/8 tsp of cumin; ground
1/4 tsp of red pepper; ground
1/4 tsp of black pepper
Vegetable spray
1/4 tsp of salt
2 tsps of margarine
1/8 tsp of salt
3 c of leeks (medium); sliced
3 cl of minced garlic
1 c of broth (low salt;chicken)
1/2 tsp of basil (dried)
14.5 ozs of canned whole tomatoes (no salt); undrained & chopped coarsely
4 ozs of uncooked linguine
Instructions:
Pound chicken into 1/4 inch thickness in wrap with the use of a dough pin, Mix powdered garlic, salt, pepper, paprika and cumin. Dust over chicken.
Coat with vegetable spray a skillet. Melt margarine on medium heat. Saute chicken for 1.5 minutes per side ’til browned lightly. Transfer chicken on a dish then set it aside.
Saute garlic and leeks to the skillet on medium heat for 3-4 minutes ’til tender. Pour broth then add in basil, salt and tomatoes.
Break the linguine to 2 inch pieces then add this to the skillet. Add in chicken then cover. Cook on medium to low heat for 15-20 minutes ’til cooked through. Good for 4 persons.
