Chicken With Pasta & Sun-Dried Tomatoes Recipe
Ingredients:
1 c of chicken broth (low salt)
1.5 ozs of sun dried tomatoes; packed w/o oil
2 Tbsps of dry wine (white)
1 pound of skinless, boneless chicken breast; cut thinly to strips
1 tsp of basil (dried)
1 tsp of olive oil
1/4 tsp of pepper
1/2 tsp of salt
4 c of spaghetti (cooked)
6 Tbsps of cheese (reduced fat Monterey Jack); grated
Instructions:
Combine tomatoes with broth in measuring glass. Cover using wrap then vent. heat in microwave to high for 3-4 minutes. Set it aside with cover for 5-10 minutes then drain and chop tomatoes.
Combine chicken white wine, basil, olive oil, salt and pepper into a 2 quart pan. Mix well then cover using plastic-wrap.
Make a vent then microwave to high for 4-5 minutes ’til cooked through. Add in spaghetti, cheese & tomatoes. Mix well. Good for 4 persons.
