Chile Salsa (Hot Tomato-Pepper Sauce) Recipe
Ingredients:
5 pounds of tomatoes
1 pound of onions
2 pounds of chile peppers
3 tsps of salt
1 c of 5 percent vinegar
1/2 tsp of pepper
Instructions:
Skin the chile pepper and wash. Blanch tomatoes in boiling-hot water about 30-60 seconds ’til the skins starts to split. Drop in ice water then remove and core tomatoes. Chop the tomatoes coarsely.
Combine the tomatoes, onions, peppers, salt and vinegar into a large-sized saucepan. Let it boil then simmer for 10-15 minutes.
Pour tomatoes in the jars, saving half inch space. Adjust the lids then process jars of tomatoes.
