Chilled Tomato Carrot Soup Recipe
Ingredients:
2 Tbsps margarine or butter
1 pound of carrots; skinned & sliced thinly
1 of onion; chopped up
1 cl of minced garlic
2 pcs of medium-sized tomatoes (fresh); peeled & chopped
1/8 tsp of nutmeg & pepper
1 can of broth (chicken)
1/2 tsp of crushed thyme & basil
1/2 tsp of salt
1 c of milk
Parsley; chopped
Instructions:
Melt the butter into a large-sized saucepan. Combine garlic, carrots and onion then cook for 5 minutes. Mix in 7 pieces of tomatoes, nutmeg, pepper, salt, thyme, basil and broth.
Allow to boil then lower flame. Cover pan then let it simmer for half an hour ’til tender. Puree soup by batches in a food blender then pour in a large-sized bowl. Mix in the milk.
Allow soup to chill then mix in the remainder of tomatoes. Top tomatoes with some parsley. Good for 6 persons.
