Chilled Tomato Dip Recipe
Ingredients:
2 ozs of soft cheese (low fat)
3 Tbsps of tomato juice
A dash of hot sauce (Tabasco)
2 tsps of mint (fresh); chopped
2 pcs of tomatoes; peeled & chopped finely
A pinch of powdered chili
1 qt of red bell pepper (small)/1 pc of celery stick (small); chopped finely
Salt & pepper
Instructions:
Combine mint, Tabasco, juice of tomatoes cheese and chili into a small-sized bowl. Stir together ’til well blended and smooth. Mix in celery or red bell pepper and tomatoes. Stir ingredients well.
Adjust seasoning with pepper and salt if needed. Let it chill before serving. Best served with vegetables.
