Chilled Tomatoes Stuffed With White Beans Recipe
Ingredients:
1 c of navy or great northern white beans
4 pcs of tomatoes (large)
1/4 tsp of salt
1/2 c of pesto
1/2 pc of minced red onion (medium) & 1 Tbsp for garnish
1/2 pc of minced celery rib
Instructions:
Wash beans then discard stones or spoiled beans. Soak beans with cover overnight. Cook beans for a couple of minutes then soak again in water with cover.
Strain beans then pour water covering beans with two inches of water. Cook beans ’til tender for about an hour. Strain beans again after cooking.
Cut the stem ends of tomatoes then scoop pulp out using spoon. Turn tomatoes top side down to facilitate drainage.
Combine beans, celery, onion, pepper, salt and pest into a medium bowl. Adjust seasonings and chill it for an hour. Stuff tomatoes with the bean mixture. Good for 4 persons.
