Greek Stuffed Tomatoes Recipe
Ingredients:
1/2 c of bread crumbs
2 Tbsps of olive oil
1 pc of diced onion (small)
2 c of spinach; cooked & chopped
2 tsps of basil (dried)
1 pc of egg
6 pcs of firm tomatoes; pulp removed
1/2 pound of crumbled cheese (feta)
Salt & pepper (to taste)
Instructions:
Saute the onion in heated oil ’til translucent. Combine cooked onions, olive oil, spinach, basil, egg, bread crumbs, cheese, salt and pepper into a mixing bowl.
Fill tomatoes with mixture then bake into preheated oven 350 degrees F for 15-18 minutes. Good for 4-6 persons.
