Kathi’s Tomato Barley & Chicken Soup Recipe
Ingredients:
3 c of chicken broth
1/2 c of barley
28 ozs of chopped tomatoes
2 c of diced carrots
1/2 c of chopped onions
2 Tbsps of minced garlic
1 Tbsp of crumbled oregano
1 Tbsp of crumbled basil
1 tsp of mustard (Chinese)
8 pcs of chicken legs
1 c of white wine (dry)
Instructions:
Combine chicken broth, tomatoes, carrots, onion, garlic, oregano, basil, mustard, chicken legs, barley and white wine.
Season with pepper and salt. Allow boil then simmer with cover for 45-50 minutes; occasionally stirring mixture.
Remove cover then simmer about half an hour more ’til thickened in consistency. Remove chicken and set it aside to cool for handling. Remove bones from meat then add it to soup. Good for 4 persons.
